Kumaoni Cucumber Raita
INGREDIENTS ( time: 5 min)
- 1 Cucumber (grated)
- 1 cup curd (yogurt)
- 1/2 tsp roasted cumin powder
- salt to taste
- fresh coriander leaves
Method
- Grated the cucumber and gently squeeze out excess water.
- mix curd, cucumber, salt and roasted cumin powder in a bowl.
- Garnish with fresh coriander and serve
Bhang ki Chutney
INGREDIENTS ( time: 7 min)
- 2 tbsp bhang (hemp) seeds
- 3 garlic cloves
- 1 green chili
- Salt to taste
- 1 tsp lemon juice
Method
- Lightly dry-roast the bhang seeds on a pan.
- Grind roasted seeds with garlic, chili, and salt.
- Add lemon juice, mix well, and serve.
Boiled corn chaat
INGREDIENTS ( time: 5 min)
- 1 cup boiled corn
- 1 chopped onion
- 1 tsp lemon juice
- Salt and chaat masala
Method
- Take boiled corn in a bowl.
- Add onion, salt, chaat masala, and lemon juice.
- Mix well and serve.
Fruit chaat
INGREDIENTS ( time: 7 min)
- 1 apple (chopped)
- 1 banana (sliced)
- 1 orange (peeled & segmented)
- 1/2 cup pomegranate seeds
- 1 tsp lemon juice
- A pinch of chaat masala
- A pinch of black salt
- Add all chopped fruits to a mixing bowl.
- Sprinkle chaat masala, black salt, and add lemon juice.
- Toss gently and serve fresh.
Vegetable pulao
INGREDIENTS ( time: 15 min)
- 1 cup basmati rice (washed)
- 1/2 cup mixed vegetables (carrot, peas, beans)
- 1 small onion (sliced)
- 1 tsp cumin seeds
- 1 bay leaf
- 1–2 cloves
- 1 tbsp oil
- Salt to taste
- 2 cups water
- Heat oil in a pan, add cumin seeds, bay leaf, cloves, and sliced onion; sauté lightly.
- Add mixed vegetables and washed rice; stir for 1–2 minutes.
- Add water and salt, cover, and cook until rice is soft and fluffy. Serve hot.
